The city of Tolmezzo (Udine)
hosted the presentation event of the project "GO! Pasta," funded
under the Interreg Italy-Slovenia Cross-Border Program, with the
aim of "building intercultural and economic bridges through
stuffed pasta." The Alpine city hosted various stakeholders,
including Slovenian and Italian pasta producers, breeders,
associations and marketing bodies, alternating between project
meetings, training and institutional moments. Cjarsons and
Idriskij Zlikrofi are the two typical products (two different
but similar types of stuffed pasta) that act as a trait-d'union
in a project that would like to create a local and international
"Stuffed Pasta Community" in order to enhance and spread the
knowledge of these traditional products. The project includes a
series of other events, including participation in food and wine
events such as "Friuli Doc" or "Gusti di Frontiera," to
facilitate the exchange of best practices, increase visibility
and spread knowledge of Zlikrofi and Cjarsons beyond their
territories of origin. Characteristic element of the project
will be a "Food Trailer," which is a van for serving these
products that will be present at food and wine events in the two
areas.
